I have been doing THD 'on and 'off since October last year.  Feel so much better when I am following it, but struggle to keep on track.  Anyway, back on it now and feeling great!<br />
<br />
However.............my sister in law is very overweight.  I bought her (and mum in law) both THD books for Christmas, but I know she has barely looked at them.   She has been diagnosed today with diabetes and high cholesterol.  (Her mum suffers from the same).  I know she is going to be given the 'eat low fat and regular carbs' advice that mum in law was given.  So, please can someone give me an easy to understand explanation of why THD will help both the diabetes and the high cholesterol, that I can use to try to help them both.<br />

So I bought a small bottle of gin and a bottle of tonic.     Really enjoyed pouring it out, but... It was disgusting!  Really sweet and sickly!     Don't know what to try with the gin instead of tonic, wondered about Angus Stewart Bitters and soda water, or just leave it in the cupboard for Christmas!</div>

No organic milk, only one full fat yogurt, no pork, hardly any vegetables or fruit available, and worst of all...<br />
<br />
I came home to find I'd picked up LOW FAT CHEESE! It was the only mature cheddar I could find. I just had a little taste and it practically made me gag. Rubbery, chemically, just yuk.<br />
<br />
Looks like I will have to change my whole way of shopping now. Butchers, markets, carrying cash with me. It's all a bit daunting. I popped into an art gallery on my way home and by coincidence there was an old man in there ranting about how awful supermarkets were and how he would never go in one! <br />
<br />
Anyway, any ideas as to what can be done with my 800g low fat cheddar?</div>

			<content:encoded><![CDATA[<div>I can feel my jeans getter a bit tighter.  Nooooooooooooooooo.  Had pancakes yesterday made with coconut flour and coconut nectar, felt full.  But went to a coffee morning and my friend had these amazing dark chocolate ginger biscuits that I couldn't keep my hands off.  Had a small lunch which didnt' help and completely binged on kids' biscuits again.  I know it was the dark chocolate biccies.  With ordinary biscuits I find it quite easy to resist but these were amazing, but completely lead to my fall.  Eaten granola for breakfast (my friend made it for me, it was delish.  She had added a tsp of golden syrup, but to be fair, it didn't taste sweet so I think she was stingy with it, which is good.  Had it with skimmed milk, and then spent all morning out with youngest in the park and then we went for a decaf (he had a juice) and he had biscuits.  Got home, my lunch was a huge cheese, ham, onion omelette with peas.  Feeling very full.  But tongiht is a beer festival which is a fund raising for the primary school.  I hope they do wine, I'm not that big a fan of beer.  They're providing food as part of the ticket price, so I know it's going to be carb heavy.  I should have gone vegetarian but I completely forgot.  bugger.</div>

What is the least offensive thing I could have off a Chinese restaurant's menu do you reckon - bound to be all full of sugar and other nasties (eek). <br />

I am on Phase 1 at the moment too - just to make it even harder - but am on day 10 of Phase 1 so could introduce something new and creep into Phase 2 ... was thinking perhaps a foo yung but I have eaten that may eggs (scrambled, fired boiled and omletts) this week I am not sure I could face anymore.<br />
<br />
Pehaps I should just have something veggaterian and just acknowledge it will be a hideously carby night but try not to mix?<br />
<br />
Also out of interest - is it OK to eat unlimited numbers of eggs - or should I be cautious of the cholesterol etc?  I'm having loads!!</div>

Instead of focusing only on the changes you aren’t seeing yet (i.e. a drop in your scale weight), focus on the benefits you are noticing, like saving money by not wasting it on junk food, or your increased energy levels.<br />

2 cloves garlic<br />
red chilli<br />
2 spring onions<br />
½ red pepper<br />
ground coriander<br />
<br />
whizz together til tiny pieces<br />
<br />
add <br />
250g fresh tuna in pieces, <br />
2 tsp nam pla, <br />
65ml coconut milk (I used about 3 inches of coconut cream squeezed from a carton)<br />
1 small egg (my egg was large which made up for the missing liquid from the coconut milk)<br />
<br />
whizz together until it forms a lump.<br />
<br />
Remove from processor and chill for at least an hour - recipe suggests overnight<br />
<br />
Form into 6 cakes using 2 spoons or wet hands and fry in shallow oil/fat until the sides start to colour and they are firm enough to turn over. Flip and cook the other side. When they feel firm to the touch they are cooked. The mix is quite sloppy so you can tell when they are done. <br />
<br />
Put onto paper towel to drain and serve. <br />
