    Default In praise of cauliflower

    Great article in the NY times about the growing popularity of cauliflower to make low carb dishes. But of course the rice growers are protesting saying can't use the name rice as it'll confuse consumers.

    That is all very positive, just hope that sufficient caulis are grown to meet demand, otherwise the price will rise in the same way butter has due to milk going for cheese.

    Already happens periodically here in Australia. Normally $3 -$5 is the price range, but last year I think adverse weather pushed the price to nearly $8 and not easy to get hold of either.

    Don't like rice particularly, so never inclined to substitute it...

    If it's an issue to rice growers, call it Cauliflower 'Rice' - simples!

    I think the cauliflower growers of the world should be singing the praises of Zoe et al from the roof tops. Just a few years ago cauliflower was a dying commodity.
