Basque Pork Stew

Pork is fantastically nutritious, great value and hugely underrated as a meat. Don't be put of by a stew in the summer, it's eaten regularly in south west France and this dish can be prepared a few days in advance. Keep it covered and refrigerated and heat as required, it makes a fantastic dish-on-the-run. You can also freeze it for extra convenience.
