Beetroot and Watercress Salad

Ingredients:

100g (3.5oz) watercress, roughly chopped

4 medium beetroot, cooked, peeled and quartered

2 tablespoons extra virgin olive oil

Sea salt and freshly ground pepper.

 

Method:

1 Mix the watercress and beetroot in a bowl and then pour over the olive oil.

2 Season and serve as required.
