Roast Pepper and Tomato Soup
Peppers and tomatoes were meant to go together and roasting the peppers first adds a delicious richness to this simple, yet luxurious dish
3 red peppers, deseeded & chopped
50g butter and a little olive oil
2 onions, chopped
2 cloves garlic, crushed
400g tin chopped tomatoes
2 tablespoons tomato purée
2 tablespoons parsley, chopped
